These are certainly my favorites and I have a couple decades of dedicated service to the cause, sampling every scone I can find. I’ve had some so dry that I could barely choke them down with a glass of milk and I’ve had some really great ones. But the best scones I’ve ever had are these savory and sweet Ham & Cheddar Scones.

I’ve been making these scones for about 15 years. I’ve tinkered with them over the years and made slight changes from the original recipe I got from the Culinary Institute of America. They are a consistent hit every single time I serve them.

Here’s what you’ll love about these scones:

  • They are moist and flavorful - savory, but slightly sweet.

  • They are great make-ahead treats. The dough needs to be frozen for at least a couple hours, but I’ve frozen it, well-wrapped, for weeks with no problem. You can keep the dough in the freezer and just cut and bake off what you need.

  • These scones are a fantastic addition to a breakfast, lunch, afternoon tea, or any meal! They go great with a simple or deluxe breakfast and are fabulous with a cup of soup or salad.

  • The recipe doubles with no problem. Around the holidays, I’ll frequently double the recipe and freeze the dough in a 9x13 pan.

  • These whip up FAST! The ingredients are simple, readily available, and can be mixed up in minutes.

Ham & Cheddar Scones

These savory and sweet scones are melt-in-your-mouth moist and delicious and a perfect addition to breakfast, lunch, or any meal! Easy to prepare and fabulous to make ahead, they will be a staple in your repertoire.

Ingredients

  • 3 oz. cheddar cheese, diced
  • 6 oz. ham steak, diced
  • 1/2 cup scallions, sliced
  • 380g all-purpose flour (approximately 3 cups)
  • 120g granulated sugar (scant 1/2 cup)
  • 2T baking powder
  • 1/2 t. salt
  • 2 c. cold heavy cream

Instructions

  1. Prepare a 9x9 baking pan with parchment paper.
  2. Sift together flour, sugar, baking powder, and salt in a large bowl.
  3. Toss the cheddar, ham, and scallions into the flour mixture and gently combine.
  4. Add the heavy cream and stir just to combine.  Do not overmix!
  5. Place the dough into the prepared pan and spread evenly.
  6. Wrap well and freeze until firm - at least two hours, but can be kept in the freezer at this point for several weeks.
  7. Preheat oven to 350F.
  8. When ready to bake, remove the dough from the freezer and let rest on the counter for five minutes before cutting.
  9. Remove dough from pan and cut into quarters, then take each quarter and cut diagonally into quarters again (yielding 16 triangles for a single recipe).
  10. Bake scones on a parchment-lined tray for 21-24 minutes or until gently golden.

Notes:

These scones are best served warm the day they are baked, but are also delicious at room temperature. The dough can be frozen for several weeks before baking, but the baked scones can also be individually wrapped and frozen after baking - reheat before serving.
